Chasselas (Fendant in Valais) is grown throughout canton Valais where it accounts for some 25% of total vines. In most countries it is grown as a table grape, but in French-speaking Switzerland it has been developed as a wine grape, appreciated for its fresh fruitiness and delicacy. The Valais name, Fendant, comes from a particular feature of the ripe grape: the skin and the pulp melt when pressed gently between fingers. It is sold under the name Fendant du Valais AOC (appellation controlée d’origine) or under the communal appellation of its growing area, the name of the smaller clos where it is grown or under the name of the winery. Fendant is considered the aperitif wine par excellence and is popular as a wine to welcome guests. It is dry, crisp, classy, elegant and lively - a wine for everyone and every situation. When harvested at peak maturity it is a wonderfully delicate blend of freshness and elegance. Fendant is remarkably sensitive to the terroirs where it is grown, with subtly nuanced notes that reflect its origins. In Ardon and Vétroz it offers mineral notes and in Sion and Saint Léonard it is full and rich while in Sierre it has an exquisite touch of bitterness. In its first two or three years Fendant shows its youthful character, with an attack that is fresh and slightly bubbly, aromas that are most often fruity and floral, supple and round in the mouth. In short, it has a lively and engaging character. This is a wine that with age develops a surprising complexity. The great vintages have a magnificent character after aging 5-10 years, with honey aromas, notes of walnut and a velvety texture. This is a marvel reserved for true amateurs: the average consumer prefers to drink Fendant young and frisky.
